As planned, I'll go into sharing recipes.  This one is from Mexico themed party, found somewhere in cyber space, changed a little bit. (Caution: hot peppers on the broiler pan may cause heavy coughing).


Heat broiler. Place pepper halves, cut-side-down, on broiler pan. Broil 6 to 7 inches from heat source 10 to 12 minutes or until uniformly blistered and charred. Cool; remove skins. Cut peppers into 1/8-inch strips. In medium bowl, combine pepper strips and remaining ingredients. Mix well. Refrigerate 1 hour to blend flavors.
Ingredients
1 green pepper, halved and seeded       
1 red pepper, halved and seeded
1 yellow pepper, halved and seeded
8 ounces mozzarella cheese, cubed (1/2-inch)
1 cup CHI-CHI'S® Picante Sauce
1/4 cup olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon coarsly ground pepper
